Little Cayman is the very definition of an island paradise and truly getting away from it all. It doesn’t take many visitors to double the population and the diving is spectacular.
Little Cayman Beach Resort is one of only a few places to stay on the smallest of the three Cayman Islands, and if you happen to be resident for a few days or a week, odds are good you’ll be served at the bar by mixologist Grace Sangbaan.
Grace is originally from Baguio, Philippines, so moving to Little Cayman was a culture shock, but a good one.
“Leaving a country of nearly 100 million people to move to an island with a population of about 140 has been a wonderful experience,” she says. “This is the best job I’ve ever had.”
Grace had trained as a bartender back home, but it was only when she arrived in Little Cayman that she began to put those skills into practice. Five years later she is still there and wouldn’t change it for the world.
“I’ve loved it since I arrived here,” she enthuses. “It’s just a different level of fulfillment from anything I’ve known.
“Because I work in a top dive resort, I meet people from all over the world – different nationalities, cultures, professions, and they all just gather at the bar and mingle. It’s a wonderful, relaxed atmosphere.”
Grace actually learned how to dive so she could relate even more to her guests, but that required learning how to swim first.
“I didn’t know how to swim before I came here,” she admits, “so I took two months to feel comfortable in the water and now I have my dive certificate.”
She particularly likes the challenge of creating drinks. Why? Because she actually doesn’t indulge in alcohol herself.
“I’ve learned through experience, guests’ preferences and precise measurements how to make great cocktails,” she laughs.
Clearly she’s doing something right because she consistently gets rave reviews.

Grey Goose Blue Moon Frozen Martini
- 1 1/2 oz Grey Goose
- 1/2 oz Triple Sec
- 1/2 oz Blue Curaçao
- Fresh lime juice
Put all ingredients in a blender with ice. Garnish with a slice of orange.
