Sidebar: Cayman Collins
Henry is originally from the Dominican Republic, and grew up with the goal of becoming a graphic designer. He actually studied the subject for three years, but also began to get into the service industry, joining the Marriott in Santo Domingo as a server and bartender when he was 21 years old.
He stayed with that hotel for a number of years before moving to the Cayman Islands to work as a recreation attendant at the Grand Cayman Marriott Beach Resort. He really enjoyed the job, as it covered a wide variety of activities including teaching guests how to dance the Merengue and Bachata, and organising games for children on the beach.
After 11 months in that department, he moved to a server position at Sol Bar, the beach bar on the property. He must have been doing something right, as he was sent to the Ritz-Carlton, Grand Cayman for a two-week bartender training stint to add more skills to his resume. When he went back to the Marriott he put what he’d learned to good use at Sol Bar and Balboa’s in the lobby.
The Ritz-Carlton requested that he join their team in March 2012, and he has been working at Bar Jack ever since.
“I love interacting with people,” Henry says. “We always have lots of fun at this bar, and I work with a great team.”
He really enjoys creating drinks for guests and has a big smile on his face every day. Why wouldn’t he? He works at the top resort on Grand Cayman and has that beautiful view on his doorstep. We should all be so lucky.
