If you don’t know who Simone Pagnozzi is by now, color us very surprised. We would like to introduce you to the mixologist who has won the Stoli Cocktail Masters competition two years in a row, and therefore proudly carries the title of the Cayman Islands’ Stoli Brand Ambassador.

Simone is a handsome man with a definite sense of style and a mouth full of teeth that impeccably reveal themselves every time he smiles. Beyond that, the guy makes a mean cocktail.

Originally from Asti, Italy, Simone is well-travelled in his pursuit of bars around the world. He worked in Dublin at a number of restaurants, including Michelin-starred Chapter One, followed by haunts in Australia and Ibiza.

Simone has worked at Agua since September 2014, and he has definitely made his mark in the award-winning restaurant and lounge. Agua is known for its classic and innovative seafood dishes, created from fresh ingredients. The cocktail menu follows the same credo of quality and inventiveness, which makes the long bar and relaxing lounge a popular spot for happy hour, weekends or casual evening get-togethers.

Simone has always said that mixology is his “passion,” and he proves it with his commitment to being the best at local competitions.

As Stoli has recently launched Stoli Gluten Free – the first major, established international brand to do so – it’s only fitting that the Cayman Stoli Ambassador creates a cocktail to celebrate it.

Fashion for Stoli

  • 2 ounces Stoli Gluten Free
  • 1/4 ounce homemade fresh thyme syrup
  • 5 drops spicy bitters
  • 1 dash orange bitters

Stir the ingredients with ice and strain into an old-fashioned glass with a large ice sphere. Add three sprays of local pimento-infused Stoli Gluten Free. Garnish with a pineapple wedge.
