You can’t visit Camana Bay without a stop at Abacus. Positioned perfectly for people-watching along The Paseo, it features an extensive outdoor patio area, as well as an air-conditioned restaurant with a bar long enough to accommodate several groups of friends. Behind this bar you’ll often find Susie Ban, our Mixologist of the Month.
Susie hails from Toronto, Ontario, a city known for its bitter winters. Therefore, it should come as no surprise that she was looking to move to warmer climes. She was working in an office as a salesperson and basically decided to change her surroundings and her job.
In 2014, Susie moved to the Cayman Islands and started the next chapter of her life as a server. “I wanted to relocate to the Caribbean, but I wanted to go somewhere safe,” she says. “Cayman seemed like a good bet, and a friend back home who had lived here recommended it.”
After her stint as a server, she shifted to bartending and changed companies, joining the staff at Abacus in Jan. 2016. “I like the hospitality industry, particularly in Cayman,” she says. “The people you’re serving are different – they’re always in a good mood, not crabby at the end of a work day.
“Abacus is a great place to be. I love the atmosphere here, and I look forward to showing up to work; I really like the team I work with.”

- 1½ ounces Milagro Reposado Tequila
- ½ ounce lime juice
- ½ ounce amaretto
- ½ ounce agave
- Juice of half a fresh grapefruit
- Dash of orange bitters
Shake all the ingredients with ice and pour into a martini glass with a brown sugar rim. Garnish with a slice of dried grapefruit.
