Juan was born in Madrid and has over 20 years’ experience in the service industry. He was most recently working at the Kimpton Seafire + Spa, but before he moved to Cayman he worked at bars in his home cosmopolitan city.

Madrid is revered for its cocktail culture, and Le Cabrera on Calle Bárbara de Braganza, where Juan worked, was listed on the website worldsbestbars.com. Beyond that, Condé Nast Traveller stated that the bar was “a revelation.” High praise indeed.

It didn’t take long for Juan to make a name for himself at the Kimpton. His enthusiasm for his trade, coupled with a strong creative streak, garnered him a crowd of loyal fans who will be happy to see he hasn’t left the rock.

Whereas many bartenders use the very recognizable tools of the trade such as shakers and strainers, Juan can often be seen resembling a mad scientist behind beakers, test tubes and other implements reminiscent of high school chemistry class. He really likes to experiment with different flavors and the results are often extraordinary and memorable.
