Mixologist of the month – Amy Eileen Bjorkman @ PD’s

Pirate’s Den Pub, better known to residents as PD’s, is a Cayman institution. Located in Galleria Plaza on West Bay Road, it has gone through several different designs over the years. Who remembers when the bar looked like a pirate ship? The décor may have changed but its popularity has never waned.

You’ll always find a friendly smile at PD’s where the prices are reasonable, the atmosphere is very social, and there is always a game playing on one of the multiple televisions mounted on the wall. One of those smiles radiates from Amy Eileen Bjorkman, nicknamed “Mugsy” for some reason we know not of.

Amy hails from Windsor, Ontario in Canada, but became drawn to the notion of sunnier climes after a family vacation.

Amy Eileen Bjorkman and the recipe for the Michelada drink“When I was about 12 years old, my family took a cruise. I fell in love with the warmth of the Caribbean, and young and naïve as I was, I dreamed of adventure – sailing the seas as an activities coordinator aboard cruise liners.

“After several firsthand accounts from those who worked on ships, however, I decided to set my sights on a land-based alternative.”

Amy’s first taste of working in the hospitality industry was when she was 18 years old, cutting her teeth at the Grand Central Tavern in Essex, Ontario on live music nights.

She got bitten by the bug and decided to kill two birds with one stone: she would keep working in the business she liked and fulfil her dream of working in the Caribbean.

She moved to Grand Cayman in 2012 and started bartending at Coconut Joe’s. She also gained experience bartending in Brisbane and Melbourne, Australia, after “a wild trip through Vietnam, Laos, Cambodia, Thailand and Singapore.”

When asked what she likes best about her profession, she says, “Even on days that I would rather be curled up with pizza, I get to be surrounded by great energy. Whether I’m working in a nightclub, a pool bar, on a boat or in PD’s, it’s non-stop laughs with friends. I get to share experiences with all kinds of people out for a good time.”
